Whenever I teach classes or do
events, these are the hit of the party and are what I've become known for.
Marie tasted them at our last event, and now makes them whenever she has dinner guests. So, if you are looking for a healthy snack or dessert to welcome in the New Year, give our stuffed Date Candies a try.
- 6 Medjool dates, with pit removed
- vanilla extract
- 6 tsp. raw coconut butter*
- 6 raw almonds or macadamia nuts
Open up each date and place several drops of vanilla extract inside the date. It is easiest if you use a dropper. Then place about a teaspoon of the coconut butter and top it with a raw nut.
Makes 6
*Coconut butter is not the same thing as coconut oil. It's made from the whole fresh coconut pureed into a delicious buttery spread. We like Artisana's brand the best!
