Making a meal where meat isn't the main event, doesn't have to be scary.  One of the first things I learned when I chose the vegan lifestyle, or rather, it chose me, is that there are 2 places I can always get meat free meals.  The first is Mexican cuisine, all that spicy goodness….I'm hungry just thinking about it….FOCUS!  The second is Asian cuisine.  They really know how to love on some veggies in those cultures!  But since I can't always know where restaurants source their ingredients and food, I know home recipes are best.

So how do you get that Stir-Fry goodness from home? This recipe is as easy as it is yummy, and is good for break fast, lunch, or dinner!  It's also a good way to use up some of the vegetables hanging around in your fridge.

Ingredients:

  • 2 tbs Sesame Oil (You can use any oil really, but this one is the yummiest)
  • 2 1/2 Cups of Chopped Vegetables  (Be Creative, try something new!  I love to use red cabbage, broccoli, zucchini, carrots, diakon, leeks, & red onion)
  • 1/2 Cup of Mushrooms (I LOVE baby Portobello, but use your favorite, make it your own)
  • 1-2 tbs Tamari
  • 1 tbs Mirin (optional)
  • 1 tbs Braggs Apple Cider Vinegar or Umeboshi Vinegar (optional)
  • Pinch of sea salt to taste
  • 1/4 Cup of raw or toasted seeds (Like, sunflower, sesame, or pumpkin)
  • Chopped fresh cilantro, spring onions, or parsley for garnish.

Method:

Heat the oil in a large skillet or wok and, when hot, add your veggies and mushrooms.  Saute on medium heat until they are tender, about 5-8 minutes depending on which vegetables you are using.  Should they start to stick, you can add a little water to the pan.  Add the Tamari to season, and also the mirin, and vinegar (if using), and salt.  Stir constantly for 2-3 minutes.  Taste, and add more seasoning if necessary, serve sprinkled with seeds, cilantro, spring onions, or parsley.  Enjoy with brown rice, or on it's own!
