Here is my favorite recipe for Ratatouille. It is easy and delicious!
4 Tbsp. olive oil
4 cloves garlic, minced
1 Tbsp. fresh parsley, chopped
1 eggplant, cut into 1/2 inch cubes
1/2 cup or more grated Parmesan cheese (optional)
2 zucchini, cut into 1/2 inch cubes
1 mild onion, cut into 1/2 inch cubes
1 red bell pepper, cut into 1/2 inch cubes
1 cup cherry tomatoes, halved
sea salt
Preheat oven to 350 degrees.
Heat 2 Tbsp. of olive oil in a large skillet over medium heat. Add the garlic and saute for a few minutes. Add the parsley and eggplant. Saute until the eggplant starts to soften, about 10 minutes.
Meanwhile, chop other vegetables and place on a large baking sheet. Add eggplant to the vegetables on the baking sheet. Drizzle all the vegetables with 2 Tbsp olive oil and gently stir to coat. Sprinkle with sea salt and parmesan cheese, if desired.
Bake for 45-60 minutes.
