Fajitas are a great meal to make if you are trying to find something that will please both your health-minded friends as well as your unhealthy minded friends! They can be made with or without meat, and you can add whatever toppings you like.
When our family gets together, this meal makes everyone happy. If you are like me, your extended family or friends may not be as into eating healthy as you are. It can be challenging to find a meal to fix that makes everyone happy- the meat eaters, the gluten free folks, and the vegans. With this fajita recipe, you will see how easy it is to adapt it to whoever might be joining you for dinner.
Vegetarian Fajitas
Marinade:
- 3 Tbsp. olive oil
- 2 tsp. fresh lime juice
- 2 tsp. freshly minced garlic
- 1 tsp. ground cumin
- 1/2 tsp. sea salt
Other ingredients:
- 8 ounces Portabello mushrooms, sliced
- 3 onions, sliced
- 2 bell peppers, sliced
- 2 cups romaine lettuce, thinly sliced
- 1 cup chopped tomatoes or salsa
- tortillas, gluten-free or whole grain
Optional toppings:
- Guacamole or chopped avocado
- Cilantro, chopped
- Green onions, chopped
- Sour cream alternative- Plain yogurt or Kefir Sauce (vegan)
- Shredded cheese
- Cooked black beans or pinto beans
Combine all the marinade ingredients in a large dish. Add the mushrooms, onions, and bell peppers. Let marinate 20-30 minutes (or longer in the refrigerator).
In a large pan, heat 2 Tbsp. of olive oil over medium heat and add all the marinated vegetables. Cook until softened. Remove from the pan. (This is where you could cook the meat for your meat-eating friends).
Serve the veggies in tortillas or on a bed of lettuce and top with the lettuce, salsa, and any other optional toppings you desire.
Serves 3-4
Note: To add meat to this recipe, simply make more of the marinade and marinate the meat in a separate container from the veggies for 20-30 minutes. Then cook over medium heat until cooked through.

Food for Life makes brown rice tortillas that are gluten free. Or Chebe bread can be made into tortillas. Personally, I just pile everything on a bed of lettuce and skip the tortillas.
Since I actually started reading the horrific ingredients on tortillas packages last year, I'm now looking for tortillas that don't have freaky ingredients. Which brands are best & where do we get them? Also, there's the non-GMO factor that I'm looking for. Maybe you could help.
